My Favorite Massaged Kale Salad from “A Time to Kale”

Know when to have fun and know when to get up close and personal with your kale! Emily of the food and lifestyle blog “A Time to Kale” was kind enough to share a delicious salad recipe she made using fresh kale and GoodHeart chicken. After 10 days of grabbing food and bevs on the go during a jam-packed-she’s-working-yet-this-girl-knows-how-to-have-fun adventure at the South by Southwest festival and conference in Austin, TX, Emily was ready for a fresh healthy meal. This one came together easily from food she had waiting for her in the fridge (GoodHeart chicken!) and some fresh kale and veggies.

When you make Emily’s favorite massaged kale salad, remember her advice to massage the kale. Eating a massaged fresh kale salad is night and day from chewing on kale that’s been carelessly tossed with vinegar and oil. Something magic happens when you massage kale. It relaxes and loses some of its bitterness — like we all do. Reading her blog makes me want to be Emily, or at least go check out Austin, TX.

My Favorite Massaged Kale Salad from “A Time to Kale”

Serves: 4

Ingredients

  • 1 bushel kale, de-stemmed and roughly chopped or torn by hand
  • 1 package GoodHeart chicken breast (or your favorite meat/protein choice!)
  • 1 avocado, cubed
  • 1 cup cherry tomatoes, halved
  • 1 cup crimini mushrooms, roughly chopped
  • 1/2 cup slivered almonds
  • ***1 cup cooked quinoa (optional)
  • 1/8 cup apple cider vinegar
  • 1 tablespoon grapeseed oil
  • juice of 1/2 lemon
  • sea salt & fresh cracked black pepper to taste
  • cayenne powder (optional)

Directions

  1. In a large bowl, massage the kale with the apple cider vinegar and lemon juice.
  2. Drizzle the massaged kale with the grapeseed oil then add the rest of the ingredients besides your S&P – toss to combine. The avocado will slightly break down and help to provide its own creamy component to your dressing.
  3. *** Looking for a heartier kale salad? Toss in a cup of cooked quinoa as well!
